1 mason jar
1 kitchen scale
- 4 cloves garlic (60 g, minced or ground)
- 5 tbsp rice vinegar or citrus juice (75 mL)
- 1/2 cup extra virgin olive oil (125 mL)
- 1 tsp Kosher salt (4 g)
- 2 tsp freshly cracked black pepper (8 g)
- 1 tbsp prepared mustard (15 mL)
- 2 tbsp garlic hummus (30 g, optional)
Emulsion
To a mason jar, add 4 cloves minced garlic (60 g), 5 tbsp rice vinegar (75 mL), 1/2 cup extra virgin olive oil (125 mL), 2 tsp Kosher salt (8 g), 2 tsp freshly cracked black pepper (8 g), 1 tbsp prepared mustard (15 g), and 2 tbsp of garlic hummus (30 g, optional).
Close the Mason jar and grasp firmly. Shake the vinaigrette vigorously for at least 20 sec until the the solution is emulsified and smooth.
Your Garlic Vinaigrette is ready. Serve immediately over your favourite salad greens and toppings. Enjoy heartily!
