- 4 carrots (200 g) (peeled and diced)
- 2 cups cow’s milk (1 - 3%) (500 mL)
- 1 tbsp vanilla extract (15 mL)
- ½ tsp ground cinnamon (2 g)
- ½ tsp nutmeg (2 g) (freshly grated)
- 4 cups water (1 L) (for boiling carrots)
- ¼ tsp Kosher salt (1 g)
Preparation (Mise en place)
Carrot Preparation
Bring 1 L of water to boiling in a medium saucepan.
Using a peeler, peel 4 carrots and remove the top with a knife.
Chop and dice the carrots into 2 cm segments and place into the boiling water. Lower the heat under the water to a mild simmer. 4/10
Blending
Add 2 cups of cow’s milk (500 mL) or your favourite alternative to a blender jug.
To the milk, Add 1 tbsp vanilla extract (15 mL), ½ tsp cinnamon (2 g), ½ tsp freshly ground nutmeg (2 g), and ¼ tsp Kosher salt.
After 20 minutes, the carrot pieces will be fork tender. Drain the boiling liquid using a colander, retaining the carrots. Allow the carrots to cool briefly (2 - 5 min), then add to the blender jug spiced milk.
Blend the mixture to afford carrot juice! For a smoother texture, strain any carrot pulp from the liquid using the colander and pour the strained carrot juice into a drink jug.
