Garlic Vinaigrette
Garlic Vinaigrette | Veggie Flavour Spa
Bathe your leafy greens in a simple and powerful salad dressing.
Equipment
- 1 mason jar
- 1 kitchen scale
Ingredients
- 4 cloves garlic (60 g, minced or ground)
- 5 tbsp rice vinegar or citrus juice (75 mL)
- 1/2 cup extra virgin olive oil (125 mL)
- 1 tsp Kosher salt (4 g)
- 2 tsp freshly cracked black pepper (8 g)
- 1 tbsp prepared mustard (15 mL)
- 2 tbsp garlic hummus (30 g, optional)

Preparation
- Assemble all equipment and ingredients.
Emulsion
- To a mason jar, add 4 cloves minced garlic (60 g), 5 tbsp rice vinegar (75 mL), 1/2 cup extra virgin olive oil (125 mL), 2 tsp Kosher salt (8 g), 2 tsp freshly cracked black pepper (8 g), 1 tbsp prepared mustard (15 g), and 2 tbsp of garlic hummus (30 g, optional).
- Close the Mason jar and grasp firmly. Shake the vinaigrette vigorously for at least 20 sec until the the solution is emulsified and smooth.
- Your Garlic Vinaigrette is ready. Serve immediately over your favourite salad greens and toppings. Enjoy heartily!
Storage
- Store remaining Vinaigrette in the fridge for up to 3 months. When taking out to serve, grasp firmly and shake for at least 15 sec.
