Carrot Juice | Drink Your Carrots in Bliss

A delicious drink made from a blend of carrots, milk, and all the spices you should use to make bread pudding.

Ingredients
  

  • 4 carrots (200 g) (peeled and diced)
  • 2 cups cow’s milk (1 – 3%) (500 mL)
  • 1 tbsp vanilla extract (15 mL)
  • ½ tsp ground cinnamon (2 g)
  • ½ tsp nutmeg (2 g) (freshly grated)
  • 4 cups water (1 L) (for boiling carrots)
  • ¼ tsp Kosher salt (1 g)

Equipment

  • 1 blender
  • 1 medium saucepan (2 – 3 L)
  • 1 vegetable peeler
  • 1 chef's knife
  • 1 colander or sieve
  • 1 drink jug

Method
 

Preparation (Mise en place)
  1. Assemble all equipment and ingredients.
Carrot Preparation
  1. Bring 1 L of water to boiling in a medium saucepan.
  2. Using a peeler, peel 4 carrots and remove the top with a knife.
  3. Chop and dice the carrots into 2 cm segments and place into the boiling water. Lower the heat under the water to a mild simmer. 4/10
Blending
  1. Add 2 cups of cow’s milk (500 mL) or your favourite alternative to a blender jug.
  2. To the milk, Add 1 tbsp vanilla extract (15 mL), ½ tsp cinnamon (2 g), ½ tsp freshly ground nutmeg (2 g), and ¼ tsp Kosher salt.
  3. After 20 minutes, the carrot pieces will be fork tender. Drain the boiling liquid using a colander, retaining the carrots. Allow the carrots to cool briefly (2 – 5 min), then add to the blender jug spiced milk.
  4. Blend the mixture to afford carrot juice! For a smoother texture, strain any carrot pulp from the liquid using the colander and pour the strained carrot juice into a drink jug.
Serve
  1. For the best experience, pour fresh carrot juice over ice with your favourite sweetener. Serve immediately, enjoy heartily!
