Equipment

  • 1 food processor (can substitute with a potato masher)
  • 1 silicone spatula
  • 1 metal fork
  • 1 ice cube tray with cover (can substitute cover with plastic wrap)

Ingredients
  

  • 2 lbs butter (salted or unsalted) (softened to room temperature)
  • 6 cloves garlic (60 g)
  • 1 tsp thyme leaves (4 g) (optional)
  • 1 tsp dried oregano (4 g) (optional)
  • 1 tsp rosemary (4 g) (chopped) (optional)
  • 1 tsp basil (4 g) (chopped) (optional)
  • 1 tsp freshly ground black pepper (4 g) (optional)

Instructions
 

Preparation

  • Assemble all equipment and ingredients. Soften butter to room temprature.

Mix and Mash

  • Add 2 lbs butter (900 g), 6 cloves garlic (60 g), 1 tsp black pepper (4 g) and 1 tsp each of any desired herbs (optional 4 g or thyme, oregano, rosemary, and/or basil).
  • Thoroughly mix the butter, garlic, pepper and herbs into a smooth, luxuriously whipped butter flecked with your desired flavourings.
  • Using a silicone spatula, evenly distribute the compound butter across all the wells of an ice cube tray and seal well.
  • Use immediately to flavour your favourite vegetables or proteins. Alternatively, freeze for up to a year and dispense 1 butter cube into a warm pan when in need of added flavour quickly. Enjoy heartily!
